Hi,

We are going to try this soup recipe tonight. Thanks! Also, do you mind sharing the email address for Ayers Farm? I am also a bean lover and we are trying the 100 mile diet. I am hoping to get my hands on some local beans. http://kellyorehovec.wordpress.com/

Thanks!

Dylan and are eating this soup right now. It is my a wonderful recipe. I've been using an Alton Brown recipe for my last two batches of butternut squash soup. Unfortunately, New Seasons did not have chanterelles or sibley squash (and I did not feel like going all over town to find some), so this is a butternut squash soup too.

However, I may try to get to the Hillsdale markety by 10am to get a sibley squash and re-try the recipe later this week. Hopefully, with some chanterelles.

Kimberly -
You will love it! It is so delicious and really easy. Dena's idea about adding chanterelles is fabulous. Let me know how it turns out :)

Dena-

Thanks for the recipe recommendation - I like the idea of adding chanterelles. What a perfect fall/winter combo. You can find more information on Ayers Creek on my previous post - Beans and Grains in the Willamette Valley revisited. There are a couple of links there to more information.

YUM! And so simple. I am so gonna try this one. I made a butternut squash soup this fall that is really delicious, too. Why are squash soups so satisfying in the cold weather?!

I'd love to hear more about Ayers Farm -- they sound amazing.
