Gooey chocolate cake from Drake’s grandma

I got this recipe from my very dear friend Drake almost 10 years ago when I asked him how he wanted to celebrate his birthday. Not known for being subtle, he replied by handing me an index card with this recipe on it. Since then, I have baked it once or twice a year and it always turns out perfect. And this is not because I am an exceptional baker. I made it last weekend for Matt’s birthday (his request) and decided it was time to share it here.
Gooey chocolate cake, from Drake’s grandma
Ingredients
1 cup buttermilk
1 cup vegetable oil
2 eggs
2 cups flour
2 cups sugar
1 Tbsp baking soda
1 tsp salt
1/2 cup cocoa (if possible, use good cocoa - I used Dagoba)
1 cup strong coffee (still hot)
Frosting
1/3 cup butter
2 oz unsweetened chocolate (same as above with cocoa, use good chocolate)
2 cups powdered sugar, sifted
4-5 Tbsp hot coffee
1-1/2 tsp vanilla
Preheat oven to 350F and grease a standard cake pan. Beat together buttermilk, oil, and eggs. Sift together flour, sugar, baking soda, and salt. Add cocoa and stir to combine. Combine liquid and dry ingredients. Add coffee and stir to combine. Add to cake pan and bake for 35-40 minutes, until a toothpick comes out clean. The center of the cake may look a little underdone. When done, allow to cool on a baking rack for 15-20 minutes before frosting the cake.
Meanwhile, make the frosting. Melt the butter and chocolate together and let cool. Add sugar and coffee to butter/chocolate mixture gradually, first adding some sugar, then adding some coffee. After all sugar and coffee has been added, mix in vanilla. Pour/lightly spread over partially cooled cake.











Made the cake last night and loved it, simple, delicious, my kind of recipe. I made this as a layer cake was outstanding.

Hi Candy - Your boyfriend devouring most of the cake is quite a statement! Thank you for sharing your feedback. If you can get over the fact they contain beans, the black bean brownies are also delicious. Be warned that they are not fudgy, cakey brownies like you might be used to. Much thinner, and taste like real chocolate.
