Chicken soup with sweet potatoes and beans

Matt has been feeling under the weather most of the week and chicken soup was the perfect antidote. The broth tastes much like chicken tortilla soup. It has a little kick from the dried chile and cumin, which I think is better for sinuses and dulled tastebuds than plain chicken soup.
The soup was also a local meal. I assembled it from leftover Ayers Creek Farm borlotto lamon beans, sweet potato, and roasted chicken and homemade chicken broth and corn from the freezer. We picked up the sweet potato, onion, and garlic a couple weeks ago at the Hideaway Bakery Saturday Market. I was surprised to find the sweet potato at the Grateful Harvest Farm stand since they are rarely grown in the Northwest. If you live in Eugene and haven’t made it to the market, I recommend a visit to pick up duck eggs, some locally grown vegetables, and a potato doughnut from Hideaway Bakery.
Chicken soup with sweet potato and beans, liberally adapted from Taste of Home
Serves 4
Ingredients
1 Tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 sweet potato, peeled and chopped into 1/2 in cubes
1 cup cooked beans (I used borlotto lamon beans, but you can substitute black beans, cranberry beans, or just about any beans you have)
1 tsp ground cumin
1 dried chile, chopped into a few pieces
4 canned small whole tomatoes, chopped
4 cups chicken broth
1 cup cooked chicken, chopped
2 cups corn
3 Tbsp chopped cilantro
Salt & pepper
Heat oil in a large saucepan over medium heat and add onion and garlic. Saute for a few minutes and add cumin and chile. Add beans, sweet potato, tomatoes, and chicken broth. Bring to a simmer and reduce heat to low. Taste broth frequently and adjust seasonings, possibly removing the chile pieces. Cook for about 20-25 minutes, long enough to cook the sweet potato completely. Add corn and chicken and cook for 4-5 minutes, long enough to heat completely. Correct seasonings and serve topped with chopped cilantro.
