Mini egg ala Buffy

In the 9 days of having hens on this ranch, egg production has averaged about one per day. We believe that most of our count has been via the two yet-to-be-named white Cochins. These eggs have been consistent, off-white color and almost “medium” size (by grocery store standards).
Today, Amy found quite a surprise. Our beautiful brown chicken, Buffy, laid what we guess is her first egg. It’s about the size of a Cadbury mini-egg and has a great powder chocolate tone. The picture shows it compared to one produced by one of her sisters here on the ranch and the big one is from a dozen we bought this weekend at Shoppe of Shalom in Halsey.







I am endlessly fascinated by the different colors and shapes of the eggs we get from our 5 birds. It’s so fun to see them all mixed together in a carton. Nothing beats the taste too! Everything I bake with them tastes better. Try some french toast if you haven’t already. You’ll be amazed.
i was recently told that you can tell what color shell the chicken will produce by the color inside of their ears. i’m too lazy to look up whether that is true or not. we recently bought some beautiful celadon green eggs…way to go buffy–ouch!
Every once in a while I get a small egg like that. Not really sure why, cause most of my girls are over a year old.
Congratulations! Apparently eggs get larger during a chicken’s laying life. In England there’s been some ethical/cruelty debates about XXL sized eggs coming out of chickens! Husband and I only consume free range eggs or better…organic free range.
I’m looking forward to trying the French Toast as you’ve suggested. I already love that with who-knows-where-they-came-from eggs. Deviled and pickled are other types on my mind!
